Puerto Rican Lechón

Saturday evening Jake's co-workers hosted a "Holiday in Paradise Christmas Party".  They rented a house in Aguada (45 minutes from us) on the water to have their celebration.

There were about 100 people there, and it was nice to connect.  We talked with one of Jake's co-workers who moved here from the states last spring.  Her family has been here for about three months, so it was comforting to have someone who understands what we're adjusting to!

KC also enjoyed connecting faces with names to some of the people Jake works with.  We had a great time!  It was nice to see people again, and also to meet new people.  A lot of people went out of their way to make us feel welcome, and we're thankful for that!



For dinner, we had Puerto Rican Lechón (roasted pig).  Neither of us had been to a pig roast in a long time, and it was great to experience this Puerto Rican tradition!  We tried the pork rind while the pig was still on the spit.  It tasted like thick, crunchy bacon.

The dinner of roasted pig, potato salad, and rice and beans was wonderful!  KC was so excited to have rice and beans for the first time in Puerto Rico!  We also had a chance to try some "unlabeled" alcohol.  There were a few different varieties, but all were pretty strong!


Our party ended with dancing, and karaoke.  It was very lively, and everyone was having a blast!  When 'Killing Me Softly' came on in English- we were excited to hear and sing along with a song we knew!!
